Sparkling Fruit & Chia Agua Fresca

About: Weird and crafty geek girl. I make food, clothing, paper houses, and hula hoops. I grow things. I write funny stuff. ASD mama times two. Crazy cat mom to Calamity Jane, Salem Massoftwoshits, and Daenerys Sto...

This is a cold, refreshing superfood beverage, and tastes utterly amazing. It's chock full of antioxidants, fiber, protein, and Omega-3's, and it's so easy to make.

You'll need:

Chia seeds

Sparkling water

Stevia packets

Frozen fruit and/or berries (I used blueberries and pineapple)

Soak two tablespoons of chia seeds in half a cup of cold water for 20 minutes, stirring occasionally to break up the clumps.

Split the soaked chia seeds into two large glasses, add 1/2 cup each of blueberries and pineapple (or similar amounts of other frozen fruits or berries). Sprinkle each with half a packet of stevia, pour in your sparkling water to top the glasses off, and stir to combine.

I like to drink mine with a straw. Sucking up the puffy little chia seeds has a similar mouth-feel to boba, making it fun. Enjoy!

being a sweetener, can I just replace stevia with sugar?

I personally wouldn't because it takes the "health" aspect out of it, but if you're not worried about that I'm sure it would be fine.

Interesting --I'll haveto try this. Are the Stevia packets really needed? I'm wondering if sweeter fruits would eliminate the need.

Stevia isn't entirely necessary. I just like the way it brings out the flavor of the fruit.
