Watermelon is one of my favorite fruits to enjoy in the hot summer. I like pie too, and who doesn't love jello! So I thought to myself, why not eat all three at once? Unfortunately, during this project, I found out that my food processer and my microwave had broken down. So I used a blender and a small pot, respectively.
Step 1: Materials
Heavy Cream (optional)
1/2 cup sugar (adjust to taste)
Graham crackers- about 10 to 20(adjust for desired amount of crust thickness)
6 tablespoons melted butter
2 packets gelatin
Blender/ Food processer
Step 2: Grind the Graham Crackers
Blend/process the Graham crackers. If you do not have access to either of these options, you can grind them by hand, but that is more time consuming. You may find large bits of graham crackers hiding within the finer powder. This is resolved with more blending.
Step 3: Finishing the Crust
Mix together the sugar, Graham cracker powder, and melted butter. Deposit it in a large glass container (as shown) and flatten out with parchment paper. For a more detailed guide on making this crust, see Penelopy Bulnicks guide on how to make Graham cracker crust.
Step 4: Watermelon Juice!
Cut slices from inside the watermelon and blend. Pour the mixture through a sieve. Measure out 2 cups of this juice. I used a measuring cup here. Save the solid material in the sieve!
Step 5: Making the Jello
Mix in the gelatin with a half cup of juice until it dissolves. Let it sit one minute. Heat up the remaining 1 1/2 cup juice to a boil while you are waiting,and then pour the hot juice into the cold juice. Mix until the gelatin is dissolved. Put the mixture in the freezer to cool down. This will take about thirty minutes.
Step 6: Putting It All Together
Pour the jello mixture into the pie crust. You will notice that the jello is still liquid. Let it sit for a while in the refridgerator until it settles into jello. You can enjoy it like this, or...
Step 7: Going the Extra Mile(s)
Freeze the pie for a better texture.
The watermelon saved from step 4 can be eaten now- it tastes amazing!
Or you can mix it with heavy cream to make it a whipped topping.
